Summer is the time for harvesting conservation. I want to share my secrets - how to cook delicious, beautiful jam.
To begin with, all fruits, except for raspberries, should be washed before cooking. If there is a desire and time, you can remove the bones. Apples and pears should be cut into quarters, removing the core.

I cook jam in the proportion of 1kg of fruit per 1kg of sugar. I close the jam jars with paper and tie the neck with a thread. It is stored at room temperature. You can cook with less sugar, but in this case, it is better to roll up the jars with lids for conservation.

Jam is cooked in 3 stages. Breaks between them can be any, but not less than three hours.

At the beginning of cooking, I use half of the required amount of sugar. Strawberries, raspberries and pitted fruits are placed in a basin and covered with sugar in layers. I pour apples, pears, currants and fruits with stones with sugar syrup. If you like thick jam, use as little water as possible to make the syrup.

After the fruits start to juice, I put the basin on the fire. I stir the jam from time to time so it doesn't burn. I bring it to a vigorous boil. It should boil no more than 10 minutes. Turn off the heat and add half of the remaining sugar. After at least 3 hours, I put the basin on the fire again and bring it to a boil again.After 10 minutes, turn off the heat and pour out the remaining sugar. Once again I repeat the whole procedure. The jam is ready. Now I remove the foam that has formed with a slotted spoon. I pour hot jam into jars. Fruits with this method of preparation retain their shape, and the jam does not resemble jam.

Now I want to share the secret of how to make jam with a unique taste. I use a mixture of several types of fruits, for example - raspberries and apricots or pears and cherry plums. You can fantasize endlessly, making different proportions of fruits in the mixture. You can add lemon zest or juice, peeled apricot pits.

Jam will always have a new, never repeating original taste. When eating jam, you can invite household members or guests to guess what it is cooked from. Not only is it delicious, it's also fun!
