The year of the Water Tiger will be replaced by the year that in the eastern calendar corresponds to the Water Rabbit (Hare, Cat). This animal will be the patron of 2023, so you need to meet it in a proper way, and when choosing recipes for the festive table, you must definitely take into account the preferences and tastes of the herbivore. In order for the coming year to be generous, successful, the New Year's menu should not disappoint the Rabbit (Cat) and should be varied, original.

About preferences

When choosing dishes, one should proceed from the fact that the rabbit's diet consists of vegetables, fruits, herbs, so the central place on the festive table should be given to vegetable and fruit salads, snacks. Since the Cat also favors the Vietnamese calendar 2023, you should not completely exclude meat from the menu. Rabbit, of course, should not be, but dishes with turkey, chicken, pork will be quite appropriate.

To appease the Rabbit, you need to put a bowl of fruit, sliced fresh vegetables, a plate with millet, wheat and oat grains on the table. When decorating, be sure to use fresh herbs, and put fresh carrots near the Christmas tree.

Main dishes

Forcooking main dishes, both hot and cold, any fish, pork and chicken meat, turkey will do. Those that can be served cold are prepared in advance so that they are “infused”, saturated with aromas. To save time, preparations for hot ones are also made ahead of time.

Juicy pork accordion with tomatoes, cheese, champignons

The dish turns out hearty, can be served with or without a side dish.

For 8 servings you need:

    • pork tenderloin - 800g;
    • tomatoes - 150 g;
    • fresh champignons - 120 g;
    • any hard cheese - 80g;
    • refined vegetable oil - 30g;
    • mustard (spicy to taste) - 1 tsp;
    • ground sweet paprika (can be smoked) - 1 tbsp. l.;
    • s alt - 1 tsp;
    • garlic - 2 cloves;
    • dry or fresh rosemary - to taste.

    Cooking steps:

    1. Chop garlic, finely chop rosemary, mix with s alt, paprika, mustard, vegetable oil, mix.
    2. Dry the washed pork with a paper towel, make cuts on it (the width of each piece is 1 cm) without reaching the bottom edge.
    3. Grease the resulting accordion on all sides with marinade, put in a deep form, cover with a lid (foil, cling film) and keep in the refrigerator for 2 hours (you can keep a day).

    1. Cheese, washed and dried tomatoes, cut mushrooms into thin slices.
    2. Shift the meat into a mold forbaking, covered with foil (you can use a silicone mat), place 1-2 plates of cheese, tomatoes, mushrooms into the incision. If the mushrooms are left, then spread them around the meat.

    1. Cover the mold with foil and bake at 180 ° C for 1-1.5 hours (time depends on the size of the piece, oven features).
    2. Turn off the oven, leave the mold in it for another half an hour.
    3. Before serving, put the meat on a dish, garnish with herbs, baked mushrooms.

    As a side dish, use baked or boiled potatoes, rice, stewed vegetables.

    Chicken meat rolls with ham and cheese

    For 3 servings you will need:

    • chicken breast fillet - 400 g;
    • raw-cured ham - 70 g;
    • slightly s alted cheese - 60 g;
    • vegetable oil - 2 tbsp. l.;
    • s alt - to taste;
    • ground black pepper - to taste.

    Cooking steps:

    1. Rinse the breast, dry it, cut lengthwise into 2-3 parts.
    2. Cover the pieces with cling film, lightly beat off, pepper (no need to s alt, if the cheese is not very s alty, then s alt).
    3. Cheese cut into cubes, put on the edge of each fillet, roll up.
    4. Wrap the rolls with ham, fry on all sides (3-4 minutes each) in a preheated pan, adding a little sunflower oil.
    5. Cut into pieces, put on a dish, decorate.

    Serve hot or warm with any side dish, as an independent dish, assnacks.

    Stacks of meat, cabbage and zucchini

    You will need:

    • any minced meat (mixture of pork and beef, pork and chicken, pork and turkey, other options) - 400 g;
    • white cabbage - 300 g;
    • onions - 2 medium heads;
    • zucchini (can be replaced with potatoes) - 6 medium-sized mugs;
    • boiled egg - 2 pcs;
    • hard cheese - 100 g;
    • sour cream - 150 g + 1 tbsp. l.;
    • s alt - to taste;
    • ground black pepper - to taste;
    • vegetable oil - 1 tbsp. l.

    Cooking steps:

    1. Cut cabbage into strips, one onion into cubes.
    2. Fry the onion in a little oil, add the cabbage, s alt and pepper, fry for 5-7 minutes (the cabbage should remain crisp).
    3. To cooled cabbage, add grated eggs, 1 tbsp. l. sour cream, mix.
    4. Chop the second onion finely or chop with a blender, add to the minced meat, s alt, pepper, mix, beat off to keep the shape.
    5. Divide minced meat into 6 parts, beat each well.
    6. Line a baking sheet with parchment, grease with oil, arrange zucchini mugs.
    7. Put the minced meat on the zucchini, shape into cutlets, shape the sides, put the cabbage with the egg in the recess.
    8. Grate the cheese, sprinkle with cabbage, put a net of sour cream on top so that the cheese does not burn when cooking.
    9. Bake at 180°C for 40-50 minutes.

    If desired, cabbage can besubstitute mushrooms.

    Salmon (trout) in mustard-honey sauce

    Dish due to the presence of soy sauce is obtained with a slight Asian bias. Similarly, you can cook chicken.

    For 6 servings you will need:

    • salmon or trout - pieces of 150-170 g (6 pieces);
    • butter - 50 g;
    • honey - 1 tbsp. l.;
    • grainy mustard - 1 tbsp. l.;
    • soy sauce - 1 tbsp. l.;
    • s alt, pepper - to taste.

    Cooking steps:

    1. Place all ingredients except the fish in a saucepan, heat with stirring over low heat until the butter melts.
    2. Line a baking sheet with parchment, lay out the fish, s alt, pepper, pour over the sauce.
    3. Bake in oven for 10-15 minutes at 200°C.

    Serve with potatoes, rice, baked vegetables, pour the rest of the sauce on the baking sheet.

    Crispy Oven Chicken

    You will need:

    • chicken carcass - 2 kg;
    • oranges - 4 pieces;
    • soy sauce - 150 ml;
    • Grated fresh ginger - 30 g;
    • sugar or honey - 2 tbsp. l.;
    • s alt, paprika, pepper - to taste;
    • cornstarch - 2 tsp;
    • juice of ½ lemon;
    • greens, lettuce.

    Cooking steps:

    1. Mix soy sauce, ginger, juice of one orange, 20 g sugar (honey), mix until sugar dissolves.
    2. Carcass well washed and dried with a paper towelcoat with marinade, put in a deep container, pour the rest of the marinade. Refrigerate for at least three hours, turning occasionally.
    3. Remove from marinade, remove pieces of ginger from the surface, if desired, s alt, pepper, sprinkle with paprika. Since soy sauce is s alty, you need to be careful with s alt. It is better to tie the legs to give a more compact shape.
    4. Bake ≈1.5 hours at 160-170 °C, grease with vegetable oil several times. The time depends on the size of the carcass and the selected temperature.
    5. Readiness to check with a wooden skewer or knife - pierce in several places. If the juice is clear, then the chicken is done.
    6. Drain the rendered fat - useful for making sauce.
    7. Squeeze the juice from two oranges, add the juice of 1/2 lemon, drained fat and put on a slow fire.
    8. Starch diluted in 50 ml of water, pour, stirring, into a mixture of juices, stir, pour 2 tsp. Sahara. The cloudy mixture will gradually become transparent when heated. Bring it to a boil, add the pulp of the orange, freed from veins, peel (the sauce will be bitter with veins), boil for no longer than 10 seconds, remove from heat.

    Put the chicken in a dish on lettuce leaves, pour over the juice, sprinkle with herbs, garnish with slices of the remaining orange. If desired, orange slices can be baked by laying them on the chicken 15-20 minutes before the end of cooking.


    Salads should become an obligatory part of the New Year's menu 2023, because the Rabbit will like both purely vegetable or fruit salads, andcomponents mixed.

    Christmas clock

    For 4 servings you will need:

    • boiled or baked chicken fillet - 200 g;
    • crab sticks 100g;
    • hard cheese - 100 g;
    • boiled egg - 3 pcs;
    • fresh tomatoes - 250 g;
    • red onion - 100g;
    • boiled carrots - 100 g;
    • mayonnaise - 100 g;
    • s alt, ground black pepper - to taste;
    • greens.

    If there is no red onion, then white not very spicy will replace it, instead of mayonnaise, a mixture of sour cream and mayonnaise, thick unsweetened yogurt will do. You can cook the day before, but s alt and season before serving. Boil the fillet in s alted water with spices (to taste).

    The lettuce is formed in a container with a flat bottom, covering it with cling film, or in a ring of not very large diameter.

    Cooking steps:

    1. Cut the meat into small cubes, lay a layer on the bottom, crush with a spoon, pepper, apply a net of mayonnaise.
    2. Chop the onion finely, put a thin layer on the meat, press down.
    3. Cut the tomatoes in half, remove the liquid pulp with a spoon, cut into dense cubes. Put on the onion, press, pepper, apply a grid of mayonnaise.

    1. Thawed in advance crab sticks cut into thin circles, put on tomatoes.
    2. Separate the yolks from the whites, grate on a medium grater, put on a layer of sticks, grease with mayonnaise.
    3. Grate the whites on a coarse grater, put on the yolks,smooth, pepper, grease with mayonnaise.
    4. Put the cheese on the proteins, finely grated cheese, press.

    1. Cut circles, arrows from boiled carrots, place on the surface of the cheese. You should get a clock face. Draw numbers on circles with mayonnaise.

    Tiffany with chicken and grapes

    If cooked the day before, the salad will be soaked and tender.

    For 6 servings you will need:

    • chicken breast - 350g;
    • hard cheese - 80 g;
    • boiled chicken egg - 3 pcs.;
    • roasted walnut (kernel) - 40 g;
    • green sweet seedless grapes - 350g;
    • mayonnaise - 70 g;
    • yogurt - 70g;
    • curry - 1 tsp;
    • refined vegetable oil - 1 tbsp. l.;
    • s alt - to taste;
    • apple (small) - 1 piece

    Cooking steps:

    1. S alt the breast, grease the curry, leave to marinate for ½-1 hour. Then fry in vegetable oil on both sides, under a lid over low heat, bring to readiness, cool.
    2. Cut the fillet into small cubes, grate the eggs on a coarse grater, cheese - on a fine grater. Grind the roasted nuts with a knife or in a blender. You should get a small crumb.

    1. Combine yogurt and mayonnaise, stir.
    2. Put the chicken on the bottom of the plate, grease 1/3 of the sauce, sprinkle with 1/3 of the nuts. Optionally, you can make a layer of finely grated sweet and sourapples.
    3. Lay eggs on the nuts, apply a layer of sauce, sprinkle with 1/3 of the remaining nuts.
    4. The next layer is cheese, put all the sauce on it, spread it on top, on the sides.

    Cut the grapes in half, spread over the entire surface of the salad, sprinkle with the remaining nuts.

    With shrimp, persimmon, avocado

    An unusual combination of fruits with dry white wine, garlic gives the salad an original taste. This light dish will decorate not only the New Year's table - it can be prepared for a small buffet, evening gatherings.

    For 4 servings you will need:

    • cooked-frozen shrimp - 400 g;
    • orange - 1 piece;
    • persimmon - 2 pcs;
    • avocado - 2 pcs;
    • ghee - 1 tbsp. l.;
    • olive oil - 50 ml;
    • garlic - 1 clove;
    • dry white wine - 50 ml;
    • balsamic vinegar - 2 tbsp. l.;
    • lettuce (mix) - 200 g;
    • walnut (kernel) - 50g

    Cooking steps:

    1. Thaw shrimp, peel if unpeeled.
    2. Remove the zest from the orange, cut off the peel, cut the slices between the partitions. Collect juice.
    3. Chop the garlic with a knife into a pulp, lightly fry in a pan in a mixture of ghee and olive oil. Then add the orange juice collected during milling, wine, balsamic vinegar.
    4. As soon as the mixture begins to boil, put the shrimp, stand for 1 minute and remove from heat, cool.
    5. Peeled persimmon and avocadocut into oblong slices.
    6. Put lettuce leaves on a plate, fruit slices on them, shrimp on top. Drizzle everything with shrimp sauce, sprinkle with finely chopped nuts.


    Beautifully presented snacks with convenient serving will decorate the New Year's table 2023, suitable as a snack while waiting for a hot meal.



    For 5 servings you will need:

    • sand tartlets - 5 pcs;
    • boiled carrots - 1 pc.;
    • boiled egg - 2 pcs;
    • fresh cucumber - 1 piece;
    • processed cheese (100g pack) - 2 pcs;
    • red caviar - 30 g;
    • mayonnaise - 2 tbsp. l.;
    • s alt, ground black pepper - to taste.

    Cooking steps:

    1. Grate eggs and cheese. S alt, pepper, mix with mayonnaise.
    2. Fill tartlets with mass, put some caviar on top.
    3. Cut the cucumber into thin strips, string on skewers with an accordion, insert into tartlets.
    4. Cut carrots into thin circles, cut out stars from circles, put on skewers.

    Tartlets can be replaced with crackers, slices of toasted baguette (loaf).

    Canape with feta and cherry cheese

    You will need:

    • cherry tomatoes by number of skewers (short skewers);
    • pitted olives;
    • feta cheese - ≈200-250 g;
    • olive oil - 30 ml;
    • sesame seeds (black + white) - 1 tbsp. l.


    1. Cut the cheese into cubes, drizzle with olive oil, sprinkle with sesame mixture on all sides (you can roll).
    2. Stick on a skewer first an olive, then a tomato, then a cheese.
    3. Beautifully spread on a dish, decorate with herbs.

    Salmon roll with cream cheese

    You will need:

    • lightly s alted salmon (fillet) - 150 g;
    • cream cheese;
    • red caviar - 100 g;
    • lettuce;
    • fresh dill, parsley, green onion - several sprigs each.

    Cooking steps:

    1. Cut the fish fillet into thin slices (for ease of cutting, you can put it in the freezer for a while).
    2. Dill leaves, parsley, onion finely chopped, mix with cheese.
    3. Put the cheese filling in the center of the slice, roll it up. If the roll is long, then cut in half.
    4. Spread lettuce leaves on a dish, put rolls on them, put a little caviar on top of each.


    New Year 2023 has come, the main part of the celebration is over and you can relax, drink fragrant tea with a sweet dessert, and enjoy fruit.

    Spruce cones

    This dessert is prepared quickly, in advance, the recipe is not complicated. A light treat for adults and children alike.

    You will need:

    • corn flakes - 2 packs;
    • condensed milk "Toffee" - 1 can;
    • walnut kernel - 100 g;
    • sugarpowder - 2 tbsp. l.

    Cooking steps:

    1. Chop nuts with a knife to fine crumbs.
    2. In a deep bowl, mix all the ingredients, mix well (the flakes are slightly crushed, but do not chop).
    3. Moisten the inside of cone-shaped glasses with water, put the mass into them, compact. Refrigerate for 3 hours.
    4. Take out the bumps, put on a dish, sprinkle with powdered sugar.

    Grape tree

    Dessert in the form of a Christmas tree will become an element of New Year's table decoration. Looks original, easy to prepare.

    You will need:

    • dark and green grapes;
    • apple - 1 piece;
    • fresh carrots (long, not very thick) - 1 pc.;
    • wooden toothpicks, long wooden skewer for fixing carrots.

    Cooking steps:

    1. Cut off the top of the apple, set on a flat plate.
    2. Cut a small indentation in the upper part of the apple, insert a peeled carrot into it, firmly fix it with a long skewer.
    3. Insert toothpicks into the carrot (this is the trunk of the Christmas tree) in a spiral or randomly.
    4. Washed and dried grapes strung on skewers.
    5. Decorate the free edges of the plate with fruit.

    Traditional panna cotta (panna cotta)

    You will need:

    • cream (10-20%) 250 ml;
    • milk - 250 ml;
    • sugar - 100 g;
    • gelatin - 1 tbsp. l.;
    • vanillin ontip of a knife.

    Cooking steps:

    1. Soak gelatin in a little water, wait until it swells.
    2. Combine milk and cream, heat until warm, add sugar, vanillin, stir until dissolved.
    3. Pour gelatin into the milk mixture, stirring over low heat, heat to 70 ° C (do not boil!).
    4. Pour into molds (glasses), leave to cool.

    When serving, decorate with berries, fruits, mint leaves.

    If you treat the preparation of the New Year's menu responsibly, deliberately, choose recipes for different tastes, then both guests and hosts will enjoy the festive feast. And the patron of 2023, the Rabbit, will favor a hospitable home.
