Stuffed eggs are so firmly entrenched in the Russian New Year's menu that it's hard to imagine a festive feast without them. There are many variations of this delicious dish. We suggest trying the recipe for spicy eggs with tomatoes and bacon. They are distinguished by a rich creamy taste with the aroma of smoke and spices. Total cooking time 25 minutes.

You will need:

  • 2 strips of bacon;
  • 6 hard-boiled eggs;
  • 3 tbsp mayonnaise or cream sauce;
  • 2 tbsp finely chopped tomato;
  • 2 tsp olive oil;
  • s alt and freshly ground black pepper to taste;
  • 1 tablespoon finely chopped green onions.

Cooking:

  • Fry the bacon in a skillet over medium heat for 3 minutes per side. Place on paper towel to remove excess grease.
  • Carefully cut the eggs in half and remove the yolks from each half.
  • Place the empty egg halves round side down on a serving platter. If the eggs are too unstable, you can carefully cut off a thin piece from the “day”, but so as not to cut a hole.
  • Mash the yolks in a separate bowl with a fork and addall oil ingredients.
  • Cut the bacon into small pieces and add half of the bacon to the yolks. Then add 1 tablespoon of tomatoes and mix gently.
  • Now you can add s alt and spices to the filling.
  • Stuff the eggs.
  • Toss the rest of the bacon and tomato together with the scallions. Decorate the tops of stuffed eggs with this mixture.

Delicious appetizer is ready!
