English muffins and cupcakes have now gained extraordinary popularity that a rare notebook with recipes does without a description of a successful option. Today we will cook an English Christmas cake according to a traditional recipe.

You will need:

  • 60 ml dark rum,
  • 1/2 stick butter,
  • brown (or white) sugar - 125 g,
  • 2 whole eggs and 1 yolk,
  • vanilla 1 pod,
  • w/o flour 200 g,
  • 50g white raisins,
  • 200g black raisins and other dried fruits
  • 30g other dried fruit
  • 1 tsp baking powder,
  • 1 tbsp cocoa (optional),
  • liquid honey.

Preparation of dried fruits

To start preparing a Christmas cake, you need to start by soaking dried fruits in alcohol. This is a traditional step in making Christmas cupcakes.

We take raisins, prunes and dried apricots (or other dried fruits of your choice) and fill them with dark rum. You can take cognac or other alcohol that you like. Leave for 15 minutes, and start kneading the dough.

Sometimes dried fruits are left to soak in alcohol for up to a week. This is done so that they are completely saturated with alcohol. Subsequently, when the cake is infused (and such cakes are infused up to a month), dried fruits will give some of the alcohol to the finished cake and thereby make it moist. This is one of the reasons Christmas cupcakes last so long.

Preparing dough

So, dough. The oil should be soft. Beat it with sugar until fluffy. This will make the cake airy.

Beat 2 whites and 1 yolk separately to make the dough even softer.

Now add vanilla seeds to this mass. If you don't have a vanilla pod, you can substitute vanilla essence or vanilla sugar.

Vanilla pods have a pronounced aroma, so one pod is enough. The rest of the pod can be put in a container with sugar and then in a week you will have homemade vanilla sugar.

Take the main part of the flour, leaving about two tablespoons for mixing flour with dried fruit.

Mix flour with baking powder, sift and add a little s alt. Here we will add spices.

There are quite traditional spices for Christmas cakes and cookies. This is usually cinnamon, ginger, ground cloves and ground nutmeg, taken in the proportions that are most pleasing to you. Usually cinnamon predominates,and the rest of the spices put less.

The total mass of spices is 1.5-2.5 tsp. Combine oil and dry mixture, mix well.

Now the dough should cool a little, put it in the refrigerator for 15 minutes. You can immediately turn on the oven at 200 degrees to warm it up well.

The dough has cooled, now you can add dried fruits to it. Drain the remaining alcohol into a bowl, then we will impregnate the finished product with it. Put the raisins in a bowl and add the remaining small portion of flour. Mix well. This is done so that the wet raisins are evenly distributed over the dough. We put the raisins in the dough. We also put dried cherries here. They are moist by themselves, so they were not soaked in rum, and large dark raisins, which are also very moist by themselves.

Traditional Christmas cake should contain a lot of dried fruit, about the same amount as the dough itself. When they are completely connected with the dough, you can lay out the mass in the form.

Baking an English cupcake

Lubricate the mold with butter (usually a rectangular shape) and line with special baking paper. We level the mass and send it to the oven.

One trick: after five minutes from the start of baking, the temperature must be reduced to 180 or even 170 degrees.

The cupcake will stay in the oven for a long time, about an hour, the edges should turn brown, and it should be completely dry. When the cake is ready, take it out of the mold and soak it with the remaining alcohol. Alcohol toosaturated with the aromas of dried fruits and became fragrant. It can be lubricated hot without waiting for complete cooling.

The rum-soaked English muffin will last up to one month. To give a glossy surface to the cake, it is smeared with melted honey. Decorate the cupcake with nuts, they will keep perfectly on warm honey, and grease the top with honey again so that the nuts also shine.
