Chicken for the New Year is a simple, quick, original and budget treat, for the preparation of which you can use both the whole carcass and its individual parts (shins, thighs, fillets). Any of the dishes in the following selection will be a real table decoration.

Whole oven chicken

A whole bird cooked in the oven will certainly become a signature dish on the New Year's table. To the surprise of inexperienced housewives, it is prepared quickly and simply, and knowing all the subtleties of baking will allow you to get juicy, soft and tender meat with a golden brown crust.

List of ingredients:

  • 1.5-2 kg of chicken per carcass;
  • 60g mayonnaise;
  • 7g s alt;
  • 3-4 g each of black ground, red hot pepper and paprika;
  • rosemary to taste.

How to cook chicken in the oven:

  1. Wash the chicken carcass thoroughly in running cool water, and then dry it inside and out with paper towels.
  2. Combine mayonnaise with s alt and spices. Spread the chicken generously inside and out with this mixture as well. You can put one or two sprigs of rosemary inside the gutted bird for flavor.
  3. Put the prepared carcass into a mold forbaking, which is covered with foil on top. Send the meat to the oven, preheated to 180-200 degrees.
  4. Bake for 60 minutes, then remove the foil and leave for another 30-40 minutes until done and golden brown. When transparent juice flows out when pierced, the bird is ready to “fly away” to the New Year's table.

Spices play the main role in this dish, the taste and aroma of meat will depend on them. You can select and combine them, focusing on your preferences. Also, the taste will be enriched by a lemon placed inside, cut into 6-8 parts, or a sweet and sour apple in the form of medium-sized slices.

Poultry stuffed with rice and dried fruits (in the oven)

You will definitely have to prepare a side dish for a whole baked bird, but if you chop the carcass with rice, then in 1-1.5 hours you can get hot chicken and a side dish for it. There is nothing difficult in preparing such a dish, and the list of necessary ingredients will be as follows:

  • 1 chicken carcass;
  • 150g rice grits;
  • 50g dried apricots;
  • 50g light raisins;
  • 1 orange;
  • 4 sprigs of thyme;
  • 40g butter;
  • 40g honey;
  • s alt, pepper and other spices to taste.

Sequence of actions:

  1. First, prepare the filling. For her, boil the rice until half cooked for 20 minutes. Then drain in a colander and rinse with hot water.
  2. Cut dried apricots into small slices. Rinse raisins. Peel the orange from the peel, disassemble into slices, withwhich to remove the films. Cut ¾ of the citrus into cubes, and squeeze out the juice from the rest. Carefully remove the leaves from the thyme sprigs.
  3. Mix rice, dried fruits, orange and spicy green leaves. Wash and dry the chicken carcass, and then fill with prepared minced meat. Cut off the belly with toothpicks, and tie the legs.
  4. Mix melted butter with honey and orange juice. Add s alt, spices to this mixture and use a cooking brush to spread the chicken with the resulting sauce.
  5. Bake the bird for about an hour and a half, periodically opening the oven and watering the carcass with the juices that stand out.

Before serving, the finished stuffed bird is cut along the sternum with kitchen scissors, after removing toothpicks and threads. Then rice is laid out, and the carcass is cut into portions.

Royal baked chicken for New Year 2023

This dish not only has a spectacular presentation, but also a whole bunch of different flavors. Of course, you will have to tinker with cooking, but the result is worth it. For pancake-stuffed chicken you will need:

  • 1 bird weighing 2 kg;
  • 11-12 pcs spring rolls;
  • 150g cheese filling.

To knead the dough for pancakes, you need to prepare:

  • 160 ml milk;
  • 160 ml boiling water;
  • 2 eggs;
  • 5g sugar;
  • 2.5g s alt;
  • 2.5g baking powder;
  • 20 ml vegetable oil;
  • 200 g flour.

As a filling for pancakes you need to take:

  • 400g minced chicken;
  • 300 g mushrooms;
  • 70g onion.

For the cheese filling:

  • 100g hard cheese;
  • 1 large chicken egg.

Smear chicken on top with sauce made from:

  • 40g sour cream;
  • 20g ketchup;
  • 10 g of horseradish.

Recipe step by step:

  1. For pancakes, shake eggs with s alt, sugar and baking powder. Pour milk into them and add flour, stir until smooth and pour in the rate of boiling water. Lastly, add vegetable oil. From the resulting dough, bake 11-14 thin pancakes.
  2. Gently remove the skin from the chicken, cutting off the legs and wings along with it, so that the finished dish looked more like a whole chicken. Next, cut the carcass and twist the fillet into minced meat.
  3. Fry onion and mushrooms in a frying pan, cool and mix with minced meat. Spread the stuffing over the pancakes and roll them into tubes.
  4. Mix the grated cheese with the egg. Next, lay pancakes in layers inside the removed skin, lubricating each row with cheese filling.
  5. Chop off the belly and throat of the formed carcass with toothpicks, tie the legs and wings together. Transfer the chicken to a baking dish, grease with sour cream, ketchup and horseradish sauce. Cook in the oven for 40-45 minutes at 180 degrees.

Shanks in dough for the New Year's table

Chicken recipes for the New Year do not always involve the use of a whole carcass, just drumsticks are suitable for a tasty and original dish. They can be deliciously cooked in puff pastry withpineapple and prunes.

List of ingredients:

  • 12 chicken drumsticks;
  • 500g ready-made puff pastry;
  • 400g canned pineapple;
  • 100g prunes;
  • 100g walnuts;
  • 40g sour cream;
  • 20g mustard;
  • 15g garlic;
  • s alt, black pepper.


  1. Combine together sour cream, mustard, garlic pressed through a press, spices and s alt. Leave the washed and dried drumsticks in this marinade for 30-40 minutes.
  2. Send the marinated meat for 30 minutes in the oven, preheated to 180 degrees. In the meantime, grind the nuts in a blender into crumbs, cut the pineapples and prunes into small slices.
  3. Thaw the puff pastry, roll it thinly into a layer on a surface dusted with flour, from which then cut 12 circles.
  4. Put a few nuts, pineapple and prunes in the center of each circle, place the drumsticks on top and collect everything in a bag, which we tie on the leg with cooking string. Send the drumsticks to the oven under the same temperature conditions until the dough is ready.

Instead of pineapples and prunes, you can put mushrooms, cheese, potatoes in bags. The drumstick can be not only pre-baked, but also fried, but in this case you need to cook it quickly in a very hot pan. This will make it juicier.

Fillet rolls with mushrooms

Dry fillet can be deliciously cooked in the form of rolls, the filling for which can be very diverse. In the classic version,which most eaters consider the most delicious, they put fried mushrooms inside.

Proportions of ingredients for this dish:

  • 2 large chicken fillets;
  • 500 g of mushrooms (mushrooms, oyster mushrooms or wild mushrooms);
  • 300g onion;
  • 300g hard cheese;
  • vegetable oil, s alt and spices.

Cooking method:

  1. Fry the diced onion and mushrooms in a small amount of oil until tender. Then transfer them to a bowl, let cool to room temperature and mix with small cheese chips.
  2. Dissolve the fillet lengthwise so that it opens like a book. Beat it a little with a hammer, then put the filling on one edge and roll it up. Tie the finished rolls with kitchen string.
  3. Next, bake in a preheated oven. Also, blanks can be dipped in a beaten egg, rolled in breadcrumbs and fried in a pan with hot oil.

Chicken julienne

Although the photos of this dish in small cocotte molds or tartlets cause profuse salivation, it is rarely prepared for everyday meals. But New Year's Eve is the perfect occasion to serve a delicious and easy-to-make hot poultry dish.

During cooking you will need:

  • 300g chicken fillet;
  • 150g mushrooms;
  • 70g onion;
  • 160 ml bechamel sauce or cream;
  • 50g hard cheese;
  • butter, ground black pepper and s alt.


  1. Melt the butter in a frying pan and fry the onion in it until translucent. Then add mushrooms chopped into thin slices, and after bringing them to readiness - finely chopped chicken fillet. Simmer everything together for 3-4 minutes.
  2. Fill the fillet with mushrooms, top with sauce (cream) and sprinkle with finely grated cheese. Next, send the julienne to the oven, where and bring it to readiness.

Chicken on the New Year's table should be not only tasty, but also beautiful, so you can decorate its legs with paper papillots with various cutouts or scallops before serving. This decoration is not difficult to make, but the dish already gets a restaurant look.
